Recipe Cannellini Bean Salad Greek-Style
Ingredients:
- 14oz can cannellini beans, drained
- 12-16 black olives
- 1 small red onion, thinly sliced
- 3 tbsp freshly chopped parsley
- 4 tbsp olive oil
- Juice of ½ lemon
- 2 hard-boiled eggs, chopped
- Salt and pepper
Method:
Whisk together the olive oil, lemon juice, salt and pepper in a salad bowl. Add the beans, onion andparsley and toss.
Top the salad with olives and chopped hard-boiled egg.
